Although originally from the UK I am proud to now call NZ my home. However not long after my wonderful husband, daughter and I arrived in this beautiful country I became seriously ill with endometriosis which resulted in me losing a dangerous amount of weight and I became intolerant to a huge amount of foods including gluten, dairy, soy to name just a few.
To get my health back on track we made a radical change to our diet removing all processed foods and went back to basics, learning to cook from scratch as I found it very difficult to find anything tasty to eat when eating out. It has been a big learning curve but certainly worth it. When my husband, who can tolerate almost anything, started stealing my cookies, we realised we had something really good that we had to share.
I soon found many people were telling me they were better than anything they had tasted. This feedback is what drives me to keep making cookies that anyone can enjoy.
